Fresh Mediterranean Chickpea Salad

Ingredients:
- 1 can (15 oz / 400g) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 2 tablespoons fresh parsley, chopped
For the dressing:
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon red wine vinegar
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions:
- In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Refrigerate for 20–30 minutes before serving to allow the flavors to blend.
- Serve chilled and enjoy!
